Recipes: Vegan Muffins and Chocolate Chip Cookies

The weather is cold outside and the heat is warm within. It is the perfect season for baking. Following are two gluten-free vegan recipes that taste good and are fairly easy to make—and you can lick all the batter you want!

 

Peanut Butter Chocolate Muffins (Source: Thug Kitchen)

Ingredients: 2 cups flour, 1 tablespoon baking powder, ½ teaspoon of salt, ½ cup of peanut butter, ¼ cup packed light brown sugar, 1 and ½ cups mashed ripe bananas, ¾ cup almond/non-dairy milk, 1 teaspoon vanilla extract, as many chocolate chips as you wish.

  • Preheat oven to 375◦F. Grease the muffin pan or use paper liners.
  • Mix together the flour, baking powder, and salt in a big bowl.
  • Use a small bowl and mix the peanut butter and brown sugar, then mix until creamy.
  • Then add the mashed ripe bananas, milk, and vanilla extract.
  • Pour the smaller bowl into the bigger bowl. Before you mix, add the chocolate chips. Then mix until just combined.
  • Scoop batter into the cups of the muffin tin until they are filled to the brim. Bake for 18-22 minutes and let cool for 15 minutes.

Before continuing onto the cookies, here’s how to make vegan eggs for the cookies. By adding these, you can eat all the batter you want because you will not get sick from the eggs!

Flaxseed Eggs

Ingredients: 2 tablespoons of flaxseed, 6 tablespoons of water

  • Add together in a small bowl. Mix together well.
  • Let sit for 1 minute before using in the recipe.

Chocolate Chip Cookies

Ingredients: ¼ cup coconut oil, ¼ cup peanut butter, ¼ cup flaxseed, ¾ cup brown sugar, ¼ cup granulated sugar, 1 teaspoon vanilla extract, the flaxseed eggs as shown above exactly, ½ teaspoon salt, ¾ teaspoon baking soda, ½ cup flaked coconut, 1 cup of gluten-free flour, as many chocolate chips as desired.

  • Cream together the coconut oil, peanut butter, flaxseed and sugars.
  • Add vanilla extract and flaxseed, then beat until well-combined.
  • Add the salt, baking soda and flour.
  • Mix in the flakes and chocolate chips.
  • Chill the dough for 20 minutes.
  • Heat the oven to 350◦F, and scoop dough onto a baking sheet by tablespoon-fulls.
  • Bake for 13 minutes or until they look golden-brown.
